Baking up a storm



At my office we have a Thursday breakfast tradition. If you want to take part your name is added to the list and then it works out to about twice a year that you have to bring breakfast in to work on a Thursday.  Last week Thursday it was my turn.



So I skipped going to Tiger’s football training on Wednesday night and got my baking on.



Bacon, Corn & Cheddar cheese bread

Savory Muffins (feta, olives, sun-dried tomatoes and spinach)

Peanut butter cupcakes

Apple cinnamon cupcakes

a couple of baguettes and some cold cuts.



It was delicious, even if I have to say so myself. 



Himself wanted to know why it is that I bake for my colleagues and not for them at home – it is simple I said, I don’t want us to get any fatter. If I baked like this at home all the time we would be rolling around instead of walking. 






I am still looking for the perfect Peanut butter cupcake recipes so if you have one that is light and fluffy please pass it along. This one was nice but just a tad too dense for my liking. The Apple cinnamon was amazing!

side note: the first time I made it I added the cream style corn but I found the bread to be very heavy. This time I didn't add it and it made all the difference. 

side note: I really liked these but next time I'll add more feta and olives. Also, I added some baking powder to the second batch and it was a lot better.

Peanut butter cupcakes with Peanut butter marshmallow fluff frosting 
side note: I liked these but they were not quite as light as I usually like me cupcakes so I'm still going to be trying out other recipes. For the frosting I sort of just make it up. Peanut butter, butter mixed until smooth. Then I just added some marshmallow fluff and icing sugar and mixed it all together.  Once a find a recipes that I really like I'll post it.

side note: these were Fantastic!

  1. Mmmm those Savory Muffins sound delicious! It ALL does!! I don't bake unless it's Christmas or for a special occasion...for the same reasons! LOL!!

  2. Your savory muffins sound so good! I pinned the recipe if I ever get the compulsion to try baking again. ;o) I agree with your reasoning behind not baking for yourself - it's much safer to bake for others, have a few nibbles, and then give the rest away!

  6. I am already hungry & now looking at that delicious looking food makes me more hungry!!!! I haven't done PB cupcakes w/ PB frosting yet...I do make a delicious peanut butter CUP cupake w/ PB frosting though if you ever want that recipe =)

  8. Yum! I would be so overwhelmed to make food for everyone (because I'm terrible cook). Everything here looks amazing. Great job! And fun idea for an office!
